What the Beerdrinker says:

Peach Melba is very pale almost green in colour, it has a foamy head which doesn’t last. It has a peach nose, that is neither overstated or oversweet, and also reminds the team of an organic tomato plant smell.

It initially tastes sweet and mellow peach and a touch of grapefruit, and is followed by a very bitter. fag ash bitterness, finish. When the beer is left to stand for a little bit the bitterness increases.
